I would like to start off by saying that we are still anxiously awaiting Emily´s baby! Natalie and I (Taylor) are holding down the fort. We are keeping our coffee close and trying to stay warm in the office. The heater in our office is acting strange this week, which is not pleasant in these cold winter months. Please feel free to email Natalie (acctmgr@tog.coop) with any of your produce concerns or questions, while Emily is out of the office.  

HIGHLIGHTS:  

MAPLE SYRUP: As a reminder, our maple syrup supplier is hoping to move more syrup. Though we only have a couple of options listed, please let Natalie know if you’re interested in a particular kind (dark, golden, amber) or pack (gallons, quarts, pints). We ask that you let us know a few days before the delivery day, so that we can give the grower enough time to pack your case! Waffles anyone?!  

BABY CELERY: Jarrah and Agustin of Chicano Sol are supplying these cute and flavorful celery stalks. This is a one-time offer! We were told that these would be best used as an addition to a soup. I have a soup brewing in my slow cooker at home; I wish that I could have put some baby celery in my soup this morning!  

WINTER SQUASH:  We are coming upon our final sales days for butternuts! Our growers can finally see the walls of their coolers. Though we do not expect to have any more #1 butternuts, our growers still have #2s available (at least for now!). We still have a good supply of long island cheese squash, which is excellent in pies and soups. Yes, this is our selection of winter squash!  

PARSNIPS: Our growers have a large quantity of parsnips. These could be a wonderful addition to soups, salads and hummus bowls. To me, they taste much sweeter than their distant cousin: the carrot. To me, it is so interesting that they must endure some time below freezing, which increases their sweet flavor.  

MICRO SUNFLOWER SHOOTS: This is the season for micros greens. They do love this cool weather. Greenbriar Produce has started offering a larger quantity of micro sunflower shoots in particular, though they are also offering some fava shoots and a couple of cases of micro greens mix as well.
